BI 122 - Nutrition

Course Description: A discussion of the basic requirements of nutrition necessary for good health. Agencies which regulate foods are discussed. Dietary needs of special groups and ages are addressed.

Credit Hours: 3:0:3

Learning Outcomes: Students successfully completing this course will be able to:

  • Understand mechanisms of appetite and hunger
  • Design and balance various diets Understand fundamental concepts of digestion and absorption
  • Understand the biochemistry of energy-yielding nutrients
  • Understand the requirements and role of vitamins and minerals
  • Construct programs for weight control, fitness, and sports
  • Assess characteristics of eating disorders
  • Determine special needs for pregnancy, breastfeeding, and growth
  • Outline appropriate nutrition guides for healthy adults
  • Appreciate elements of food safety from spoilage to additives

Course Assessment: Exams, assignments, project, presentation.
